Asian Inspired Honey Soy Salmon


1 bunch broccolini

1 small punnet Rosa tomatoes

1 onion

1 tbsp sesame seeds

1 tsp olive oil



1 tbsp sesame oil

1/4 cup thick, dark soy sauce

1 clove garlic

1 tbsp honey (optional)

1 tsp of Lemon Juice

Sprinkle of Chili Flakes (optional)


1. Preheat oven to 200°

2. Slice the onion into rings. Arrange the onion and tomatoes on a lined baking tray, leaving room for salmon and broccolini, and drizzle with olive oil or spray. Place the tray in the oven for 20 minutes.

3. Meanwhile, make the marinade by combining all marinade ingredients in a bowl and whisking until combined.

4. Remove semi-cooked vegetables from oven and add broccolini to tray. Toss the veggies.

5. Place two salmon fillets in the middle of the baking tray, surrounded by broccolini and onion and tomato, and drizzle over marinade and sprinkle with sesame seeds. Place the tray back into the oven for 12-15 minutes.

6. Remove cooked salmon from oven and serve hot.
